New Potato Salad

We put parmesan on pretty much everything, but this new potato salad is an all time summer favourite. Recipe below!

Serves 4

I N G R E D I E N T S
8 small new potatoes, cubed
125g of spinach, rinse and pat dry
1/4 cup of capers
1/2 avocado, diced 
1/4 cup walnuts chopped 
75g of plant based parmesan
1 tablespoon lemon juice 
30ml olive oil
Chilli flakes
Salt
Pepper

D I R E C T I O N S 
Bring water to a boil
Once boiling, add potatoes and cook for 20-25 minutes (until tender)
Add all remaining ingredients to large salad bowl; spinach, capers, avocado, walnuts, plant based parmesan, lemon juice, and olive oil
When the potatoes are ready, drain water and leave for a few minutes to cool off
Add to the salad when cool
Season with salt, pepper and chilli flakes to taste 
Mix well
